Merry Christmas from all of us to all of you!!
For as long as I can remember, Eggs Benedict has been the Engleson family traditional Christmas breakfast. As a small child it was painfull to wait for this meal to be cooked with a stack full of presents under the tree, but, as I have grown older (and become much more sophisticated!) I have come to fully embrace this tradition. There is nothing like good ol’ eggs benny, and champagne and orange juice, to get Christmas going just right - sorry Magnus, you’re just going to have to wait!
Merry Christmas! Tomorrow we are having a different variation of eggs benny, I’m putting the ham in muffin tins… cooking up some mushrooms, shallots and taragon. Putting those in the ham cups and then cracking an egg over them… then they get cooked in the oven.
Afterwards you can eat as is or put it on an english muffin with some sauce…. mmmmm
